About us

When it comes to making tortilla chips, the ancient Aztecs knew best. They perfected a maize-processing technique that results in better taste and aroma, better texture, better nutrition, and an all around better tortilla chip. This technique was essentially lost when maize was adopted by Europeans, but thanks to our dedication to authentic Mexican flavour and an old family recipe, you’ll find Los Cantores has the best tortilla chip in the bag. 

Making a better tortilla chip takes a surprising amount of science, art and know-how, plus a passion for discovering what makes good food truly exceptional. Luckily, at Mexican Corn Products, we come by our calling naturally. 

While we’re located in Ottawa, our family, Godinez-Luna, comes from Tamazula, a pre-Hispanic town nestled in the south of Jalisco state, Mexico. Often considered the birthplace of many things Mexican, the region is famous for its folklore, music, tequila, and mouth-watering Mexican cuisine! 

It was in this ancient city that one of our ancestors, Grandma Carmen, or “Doña Carmen” as she was called, came to master the Mexican culinary arts. From her kitchen in “La Hacienda Los Cantores,” she experimented with her craft, adding a pinch of this and a dash of that until she had perfected recipes for the most delicious authentic Mexican and Spanish dishes. 

Those recipes had been passed down from generation to generation—and when we emigrated to Canada, we made sure we brought them with us. 

Once we got to Canada, we were surprised at what passed for the foods of our homeland. Authentic Mexican foods are lighter, more delicate and subtle; made with natural ingredients like onions, spices, garlic, jalapeños and sea salt. Plus a splash of fresh lime in almost every dish. 

We saw a real need to bring the taste of authentic Mexican cuisine to our new home. So we started making flavourful, traditional versions of some of our family favourites. Eventually, we began producing a plain corn tortilla chip for sale under a private label at a local fresh food chain. 

Customers couldn’t get enough of them. That was the turning point. 

In the years that followed, our own Los Cantores brand was launched and eventually new flavours were added to the product line. Favours like jalapeño, chipotle and lime, plus a cinnamon sugar chip that paid homage to buñuelos, a traditional Mexican sweet treat, and one made from now-trendy and nutritious ancient grains. But it doesn’t end there— our family is committed to keep finding ways to bring authentic Mexican taste to the World.

Gabriela Godinez-Laverty graduated from Dentistry in 1998 in Guadalajara, Mexico. In 2001, she married to a Canadian Army Officer and  immigrated to Canada. Unable to practice dentistry, she opened a home-based small business “Mex-Reflex” of home decoration accessories imported from Mexico. Even though this first company disappeared within a year, it gave Gabriela a taste for business.

In 2002, she entered to a small course on Entrepreneurship at a local school and discovered her passion for business.

On April 2004, her and her husband founded Mexican Corn Products, Inc.  By May, 2004 her Father and brother join her in Canada to start operations.

Since then, Gabriela and her team have developed six different flavours of tortilla chips. MCP brand “Los Cantores” can be found at many of the independent grocers around Ontario and Quebec.

José Godinez Del Toro is the Chairman of the Board and a co-founder of Mexican Corn Products.

A life-long entrepreneur, José has owned and operated over a dozen businesses. His experience provides the company with sound judgement and guidance.

José is a graduate in Chemical Engineering from the Universidad de Guadalajera, and has expertise in process design and recipe formulation at industrial scale.

A co-founder of Mexican Corn Products, Pepé Godinez Luna is responsible for plant operations.

His role includes the development of complex manufacturing solutions that encompass new processes and equipment, allowing the company to produce high-quality food products.

Pepé is a graduate in Electromechanical Engineering from the Universidad Panamericana in Guadalajera.
